How to remove the fishy smell of Shrimp

Frozen shrimps are best thawed naturally

Most of the shrimps bought are frozen shrimps on the market. The smell of frozen shrimps is more serious. 1. Remove the black fishy glands

Remove a black fishy gland (probably the stomach and intestine) from the back of the shrimp.

Fish gland: There is a white line on both sides of the fish body, called "fishy gland". The mucus secreted by this mucous gland contains trimethylamine oxide. Trimethylamine oxide has a certain delicious taste (contrary to the delicious fish), but when the fish dies, the delicious "trimethylamine oxide" will continue to "deoxygenate". Reduction into "trimethylamine" diffuses into the air, the smell we smell is basically "trimethylamine" odor. Some odors of the external environment, such as the earthy odor in water, are directly attached to the fishy line through small holes. Shrimp has fishy glands on its body, the same as fish.

2. Salt water immersion

Soak shrimps in salt water for two hours to remove the earthy smell.

The principle of deodorizing salt is mainly based on the principle of salting out, coupled with cold water using osmotic pressure. Salting out of salts and dilution of osmotic pressure of crystals weaken in alkaline condition and strengthen in acidic condition.

3. Pickling of Liquor/Liquor/Fruit Wine

Wine is an organic solvent, which can dissolve and volatilize odorous substances. So we can sprinkle shrimps with wine or liquor and marinate them for 20 minutes to remove the fishy smell. Because the fishy smell of fish and shrimp is mostly trimethylamine, and the wine contains alcohol, alcohol can dissolve trimethylamine well. Moreover, when cooking, the temperature is higher, alcohol and trimethylamine are easy to volatilize, so in a short time, the smell is removed.

4. Cinnamon stick

When boiling shrimp in boiling water, put a cinnamon stick in the water, which can eliminate the odor and will not affect the frightening taste.

5, vinegar

7. Orange peel

What kind of shrimp tastes slightly fishy?

1. The fishy smell of fresh shrimp is much lighter than that of frozen shrimp. It is suggested to buy fresh shrimp. If it's frozen shrimp, thaw it naturally and then make it.

2. The fishy smell of freshwater shrimp is much lighter than that of seawater shrimp, so it is suggested to buy freshwater shrimp.
